Delicious Asparagus Quiche Recipe

On our search for something different to bring to you to try, we decided to make a delicious asparagus quiche. We choose to use asparagus but you could easily substitute it for sausage, ham, diced chicken, or just have only vegetables in this dish and have a lovely meal for your family.

Don’t let Asparagus Quiche intimidate you because the name sounds fancy. Try it! It is really quite a simple recipe. Make sure you have some toothpicks to make sure that it is done inside.

Ingredients:

1 pound of fresh asparagus – with ends removed and the cut in 1″ chunks
6 slices of nitrate-free uncured bacon cooked and chopped
8″ pie crust 
1 egg white for brushing on pie crust
6 whole eggs
1/2 cup half and half
3/4 cup milk
1/8 tsp nutmeg
salt and pepper to taste
6 oz grated Swiss cheese
5 oz grated mild cheddar

Directions:

Trim off the tough ends of your asparagus. Chop the remaining into 1″ pieces and steam the remaining until they are tender but not mushy. About 4 minutes or so. Set aside and cool.

Cook and drain the bacon allowing it to cool and then chop.

Place pie crust in a deep-dish pie pan and brush pie crust with beaten egg white

Sprinkle the bacon, and asparagus over the pie crust

Grate your cheese and sprinkle it over the bacon in your pie crust.

In a bowl beat your remaining eggs, cream, milk, nutmeg, salt, and pepper.

Pour the eggs mixture over the cheese and bacon mix.

Bake in a preheated oven at 375  degrees F. uncovered until firm.

Approximately 50 minutes or until a toothpick inserted comes out clean.

Pull the asparagus quiche out of the oven and let cool for about ten minutes or until it has firmed up. Then slice in wedges, and serve with a nice salad, steamed vegetables, and a loaf of French bread.
