Be My Valentine Pie Pops

 

Pie pops are a delicious treat. They can be made simple and not too sweet or extravagant and more sweet. We wanted to make something special to give out for Valentine’s Day and we decided to make some Valentine-themed pie pops simple enough that grown-ups would love them but also cute enough to be special. That is where these pie pops were born.  What is a pie pop you may be asking by now? Think of a pop tart or hand pie on a stick. These could be made with sugar icing, with a chocolate coating dipped in fancy sprinkles or chopped nuts. The pie pops could be iced like a sugar cookie with some fancy design even. There is so much that could be done. 

We were looking for something cute and simple to just let some of our neighbors know that we loved them so we went with a non-iced pop and do you know what? They were wonderful! The best thing is you can choose your own filling too. Make sure that it is a jam or preserve that is not too thin or it may leak and who wants a broken heart, right?

Be Mine Pie Pops Ingredients:

1/2 Teaspoon Sea Salt
5 Tablespoons Cold Water
Your Favorite Jelly or Preserves (or try our recipes for blueberry and strawberry preserves)

Pie Pops Directions:

Measure out your flour, salt, and butter together in a medium-sized bowl.
Mix the dry ingredients together well.
To the dry ingredients measure out and add the water. 
Gently fold the water and the flour mixture together until it forms a ball.
Cover the dough with plastic wrap and then put the dough into your refrigerator for two hours.
When the two hours is complete, remove the dough from the refrigerator.
Roll out the dough and using cookie cutters shaped like your favorite hearts, cut out hearts and place on a silicone mat on your baking sheet or cookie sheet. 
With a small spoon, place a small dot of jelly in the center of the heart.
Press the lollipop stick lightly into the bottom section of the heart.
Grab another heart cookie and place it over the top of the first one being careful to match up the edges as closely as you can.
Use a fork to gently press the edges together all around the edge of the heart shape.
Place your baking sheet into a preheated oven and Bake at 350 F for 10 minutes or until golden.
Remove the cookies from the baking sheet with a spatula carefully and place on a wire baking rack to cool completely.
These cookies can then be iced, dipped in chocolate, sprinkled with sprinkles, or just left like this. We loved them like this so we left them this way. If you choose a different topping, we would love to see what you come up with!
