What You Will Need To Make Blueberry Preserves:
- Boiling Water Canner
- Half-pint jars clean
- roasting pan in the oven filled 1/3 of the way with hot water and oven on the lowest setting
- Jars in roasting pan in the oven
- Clean washcloth or paper towels for wiping jar rims before putting lids on
- Jar grabber to grab hot jars
- magnetic jar lid want to grab hot lids
- Small pan with hot water for the jar lids
- Pan to make preserves
- Hot Pan Holders
- Several Towels For the Jars To Cool On On Your Counter
- Towel To Sit Jar On While You Fill Them (keeps jars from breaking)
- Apron to protect your clothes
- Ladle to put preserves in a jar
- Plastic Canning Funnel To Aid In Getting Preserves In Jar
- Measuring Cups
Blueberry Preserves Recipe
Ingredients
- 2 Pounds (2 Cups) Blue Berries (we use organic
- 4 Cups Organic Raw Sugar
Instructions:
- Combine berries and sugar.
- Slowly bring to a boil and stir until sugar dissolves.
- Cook rapidly almost to the gelling point.
- As the mixture thickens, stir frequently to prevent sticking, Remove from heat.
- If needed skim foam off the top.
- Ladle hot preserves into hot jars, leaving a 1/4 inch headspace at the top of your jar.
- Wipe the rim of the jar with a clean cloth or paper towel
- Cover with a new lid and a ring
- Tighten the ring (but do not over tighten)
- Place hot filled jar in hot water.
- Repeat the filling process until the canner is full (do not stack jars).
- Water should be 2″ above the tops of the jars
- Bring water back to a boil
- Start your timer. Process 15 minutes in boiling water canner.
