This is such a delicious taco salad recipe and it is so easy to make. It is great after a busy day when you just don’t want to be in the kitchen all day. It is great when you have leftovers from last nights tacos or burritos. I love the crisp lettuce with the tender ground beef and crunchy corn chips. We at these a lot when I was a child and I always loved them. These are great on hot summer days when you don’t want to get the kitchen hot and miserable.
This taco casserole was from an old worn-out and stained recipe card that was Grandma Cottages. She loved this dish and made it often in my childhood. She had six children and many grandchildren and made meals that went a long way for this large family. This recipe fits the bill.

Who doesn’t love a good breakfast to start off their day and when it comes to breakfast the big daddy is the breakfast burrito. I love it with hot sauce slathered on it.. a little spice in the morning is great, right? So scramble those eggs and warm your tortillas because this breakfast burrito is top dog! My sister loved to make these when I was a child. She would add slices of jalapenos inside the burrito. You can make these spicy or mild so everyone in the family will get what they like. These are so good and great to grab and go for a busy family.
These pulled pork tacos are really amazing. We were looking for a recipe that was different than the same ole ground beef tacos with lots of flavor and texture. This would also be great with sauteed onion and bell pepper in it as well like a fajita. The pork is so tender and flavorful and just about melts in your mouth. Cover it with shredded lettuce, your favorite cheese and delicious salsa. You won’t be sorry.

Cheese Nachos
We are California Girls and as such we loved to go to the beach. There is something so beautiful and relaxing to listen to the waves lap at the shore and the birds calling as they dip and circle looking for the next meal. The pipers run up and down the sand on the hunt before the next wave sweeps the shore. Ah, Huntington Beach.
