Directions For Peppermint Chocolate Bark :

  • Place a cookie sheet on the counter to pour your melted chocolate in. Save a bit to use on the top of your bark to decorate. Chop it up now so that it will be ready for you when you need it because you won’t have time at the end.
  • Pound the Candy Canes until they are broken up. (we used a rolling pin. Just remember to put the Candy Canes in a plastic bag before breaking them up or you will get a very large mess)
  • With a knife rough chop the dark chocolate
  • In a double boiler or a small saucepan with a heat-proof bowl add water to the pan.  Place the dark chocolate in the pan and turn on the stove.
  • Melt the dark chocolate on medium heat. You can also use the microwave and a heat-proof bowl but we used a double boiler for ours. Stir constantly to make sure it does not get too hot and overcook the chocolate. You can use different types of chocolate for this so we suggest that you use what you love.
  • If you are using dark chocolate and want to add a little sweetness you can add a bit of stevia drops to the warm chocolate and stir in.
  • Once the chocolate is silky smooth it is time to get it out of the pan. Grab a rubber spatula and head to the counter where your baking sheet is waiting.
  • Scrape the chocolate out and pour the melted chocolate all into a thin layer onto a parchment paper-covered baking sheet.
  • Use an offset spatula or a butter knife to spread the chocolate out in a single layer and make it smooth.
  • Allow the chocolate to cool to room temperature and it will harden again.
  • Next, clean your double boiler bowl or use a clean heat-proof bowl.
  • Break up the white chocolate bar or pour the white chocolate chips into the bowl.
  • Stir the chocolate as you gently heat the chocolate.
  • When it is silky smooth pour the white chocolate over the top of the dark chocolate and spread it in a thin layer across the baking sheet.  The easiest way we found to do this was to just use a butter knife but you use what is handy.
  • Grab your candy cane pieces and chocolate bits and sprinkle them over the top of the hot chocolate.
  •  Allow the chocolate bark to cool to room temperature and harden
  • Take the hardened homemade chocolate bark and break it up into smaller pieces. You can do bite-size pieces or a bit larger.

When they are hard, store in a ziplock bag or in a sealed container until you are ready to serve.  You can buy pretty boxes or tins to give them as gifts or take a little bit of the chocolate bark and stack it and use twine or ribbon to tie it up like a package.  You can use a tag punch and some cardstock to make a tag for it. This would be great for a holiday party and each guest could take home a little gift. It is a simple recipe but it really is special.
