Cream of Chicken Soup – Condensed

Condensed cream of chicken soup is in so many recipes today.  But we like to do things more healthy and in a whole food version.  We are sharing this recipe for a homemade condensed cream of chicken soup with you if you too

  • Want to enjoy your favorite recipe but do it in a more healthy manner.
  • Have food allergies to soy and need a version of the condensed cream of chicken soup that is safe to eat.
  • You are in the middle of making a recipe and realize that you don’t have a can of your normal condensed cream of chicken soup!

What is the difference between cream of chicken soup and condensed cream of chicken soup? Well a condensed soup is a thicker version of the soup that you can use as is in recipes or you can thin it out using water, broth, milk, cream or even wine to make soup. 

What you will need to make condensed cream of chicken soup

Homemade Condensed Cream of Chicken Soup Recipe

  • Grass fed Butter 
  • 1/2 Onion minced
  • 1 clove of garlic minced 
  • 1/4 of a cup of cooked chicken minced
  • 1 1/4 cups of All Purpose unbleached flour (we use organic)
  • 2 1/2 cups of whole milk (we use organic)
  • 1 tsp celery salt
  • pepper
  • 4 cups of bone broth, or chicken broth

Directions 

  • Using a cutting board mince the cooked chicken finely and set aside. 
  • Cut the bottom off of the onion and peel it then remove dry skin. Cut the onion in half and place half of it inside the food processor and place the other half in a plastic lidded container or zipper bag and save for another recipe.
  • slice the base of the garlic clove and remove the dry peel
  • Place 1/ 2 of the onion and the garlic clove in the food processor and chop very fine
  • In the small sauce pan melt the butter 
  • When melted add the finely chopped onion and garlic and sauté them in the butter adding salt and pepper until the onions are translucent and the garlic is tender and fragrant.
  • Add 3 cups of broth and seasonings to the pan.
  • In a measuring cup place the last cup of broth and the milk or cream. To this add the flour and whisk until all clumps are gone.  When finished slowly stream the liquid into the soup whisking constantly.  
  • Continue to whisk until the soup is very thick like the canned variety
  • Add your bits of chicken and stir.  
  • 1 1/4 cups of this soup is equal to one can of  of store bought canned condensed cream of chicken soup
