Delicious Cabbage Roll Soup Recipe

Cabbage roll soup is such a cozy and delicious soup and is such a great dish for the chilly fall and winter days.  It is not a really heavy meal but cabbage roll soup is wonderfully satisfying.

Cabbage roll soup tastes a lot like your traditional cabbage roll casserole that your mom used to make but is deconstructed into a soup so you have all of the flavors  of that old family favorite, but the cozy broth to go with it. It is so easy to make too.

This soup pairs wonderfully with a crusty sourdough or French bread and if you would like it a bit more hearty add your favorite salad with it.

 

What you will need for Cabbage Roll Soup

 

Cabbage Roll Soup Recipe

    • 2 teaspoons olive oil 
    • Himalayan salt and pepper to taste
    • One pound of ground beef  (we like to use 70% lean)
    • 1 onion finely diced
    • 2 teaspoons minced garlic
    • 4 cups coarsely chopped green cabbage
    • 2 carrots peeled, quartered and sliced
    • 4 cups beef broth (we like to use our own canned beef broth, but you just use what you have.
    • 3-  8  ounce cans tomato sauce (we use two quarts of our home-canned tomato sauce)
    • 1/2 cup uncooked Jasmine rice (or your favorite rice)
    • 1 bay leaf

Directions For Cabbage Roll Soup

    • Using a cutting board peel and dice the onions and set aside
    • Peel and dice garlic cloves and set aside
    • Pre-cook the rice and set aside.
    • Heat the olive oil in your stock pan on medium heat.  
    • Saute the onion in the oil. When almost done add garlic and cook until golden and fragrant but not brown.
    • Remove and set aside.
    • Add the ground beef to the pan and season with salt and pepper to taste.
    • Using a wooden spoon, break up the beef so that it is in small bits and not large chunks. 
    • Stir until beef is browned, cook for five minutes or until the meat is done.
    • At this point you can strain the extra fat off of the beef if you would like.
    • Replace the beef in the pan
    • Add the onion and garlic to the ground beef.
    • Pour in the broth and the tomato sauce and stir well. 
    • Add the cabbage, carrots bay leaf and salt and pepper to taste.
    • Cook until vegetables are tender
    • Add rice and stir
    • Bring to a simmer until the rice is hot and the vegetables are done. 
    • Remove bay leaf and discard.
