Vanilla wafers are just a sweet part of childhood and there is a comfort in them. We wanted to make a vanilla wafers recipe that was delicious but also full of real ingredients and not full of high fructose corn syrup, chemicals, and other questionable ingredients but maybe even more delicious than the store-bought version in the box you remember as a child. This is perfect to make the traditional nilla wafer banana pudding with. This is such a simple recipe to make and the great thing is that you have complete control over what goes inside, unlike the box of nilla wafers. Never had a vanilla wafer? They are small vanilla-flavored crunchy cookies that are perfectly round and flat. It is an easy cookie batter to make at home with great results and simple ingredients.

Now these are made with regular flour but if you are gluten-free then you will want to exchange the all-purpose flour for your favorite gluten-free variety for a delicious gluten-free vanilla wafers recipe.
What you will need for making the vanilla wafers recipe:
- Large mixing bowl and a wooden mixing spoon or
- Stand mixer or Electric hand mixer
- Small bowl
- Small 2 tsp cookie scoop
- Baking sheet
- Spatula
- Silicone mat
- Oven mitts
- Measuring cups
- Measuring spoons
- Wire rack
- Airtight plastic container or cookie jar or ziploc bags
Homemade Vanilla Wafers Recipe
- 1/2 cup of room temperature unsalted butter (we use grass-fed butter but you use what you have and if you only have salted just reduce salt)
- 2/3 cup sugar (we use raw sugar but you can use regular granulated if that is what you have).
- 1 large egg that is room temperature
- 4 teaspoons of Vanilla Extract (see our recipe for homemade vanilla extract) we like real vanilla because we don’t want artificial flavors’
- 1 1/2 cups of unbleached all-purpose flour
- 3/4 tsp non-aluminum baking powder
- 1/2 tsp salt (we use gray Celtic sea salt)
- 1 tablespoon of milk

Directions For Vanilla Wafers Recipe
- In the large bowl to your mixer place room-temperature butter and sugar and beat it on medium speed
- When it is a creamy consistency turn off the mixer and add the eggs and vanilla and mix on low speed
- Add milk
- In a separate small bowl stir together the dry ingredients until well combined.
- A little at a time add the flour mixture to the wet ingredients until well combined
- Grab your cookie sheet and your silicone baking mat or parchment paper and using a small cookie scoop, piping bag with a large round tip or just a teaspoon scoop out cookie dough out of the bowl and onto your baking sheet.
- Put in the oven and bake at 350 F for 12 to 14 minutes until your vanilla cookies are golden brown around the edges and you have crispy cookies.
- Pull the cookie sheets out of the oven and place on a trivet for a few minutes to cool a bit.
- Remove the sugar wafers from the cookie sheet and onto a wire cooling rack to cool
- When completely cool store in an airtight container to keep the cookies fresh and crisp. You can store them in a sealed plastic container, a cookie jar or ziploc bag.
