The Most Amazing Huntington Beach Burger

The Huntington Beach Burger is a picture of the sun, sand, saltwater, and its famous Dwight’s cheese strips that have been a part of this particular California beach for decades. Crispy strips of corn tortillas sprinkled with melty shredded cheese and dipped in a spicy tomato sauce.  Thousands of men, women, and children have stood in line over the years in the hot summer sun waiting their turn to get their icy cold drink and delicious cheese strips.
 
 It has been a part of the summertime in southern California since 1932.  I remember standing in line as a little girl with my sisters and mom hopping from foot to foot in the hot sand watching the people up and down the beach as we waited for the delicious snack.  As a teen, my best friend, her sisters, and I would bike the mile to the beach and stop at Dwight’s concessions as it was often a part of the trip as we would sit on the sand and watch the waves rolling and the gulls flying overhead.  
 
Several years ago now we made a trip to what will always be home deep in our hearts. No matter how long or how far this beautiful stretch of beach will be home away from the Cottage, but when we are away from it we try to bring the flavors to the Cottage and so we introduce this delicious burger, the Huntington Beach Burger! 
 
This hamburger features a deliciously soft homemade bun covered by Huntington Beach cheese strips and a spicy sauce and crispy lettuce.
 
 

Ingredients:

Lettuce
Beef Patties
Cheesy Hamburger Buns (recipe below)
 
 

Sauce:

Ketchup
Hot Sauce or Tobasco (to taste)

Directions:

Mix well.

Cheesy Huntington Beach Burger Buns:

Ingredients:

1 1/8 Cup Spring Water
3/4 Tbsp Raw Sugar (We use raw sugar but feel free to use what you have in your kitchen)
1 1/2 Tablespoons Coconut Oil  melted but not hot or olive oil
1 1/4 Teaspoons Himalayan Salt (We use Himalayan pink salt because of the added minerals but you can use what you have)
3 Cups Organic Flour All purpose  (We use organic but you can use regular all-purpose flour)
2 Teaspoons Dry Yeast  This is Active Dry Yeast

1/4 cup of Cheddar Cheese shredded small.

How To Make Homemade Huntington Beach Burger Buns By Bread Machine:

 

We put the water, sugar, and oil in the bread machine. Follow with flour, salt, yeast, and cheese. Set bread maker to “dough” cycle. When the dough is finished take it out of the bread pan and make 5-6 dough rounds that are of about equal size.

 

Place on your cookie sheet and cover with a light cloth (I use flour sack towels or my great Aunt Anna’s apron … covered with love, right?) in a place that is warm and not drafty.

 

Let rise until the rolls are doubled at least in size. Preheat your oven to 350 degrees F. When they have risen, uncover the rolls and place in a hot oven for 20 minutes. They will be just lightly golden but not brown and will be soft. Turn out onto a rack and slice in half to use as a burger bun.

Huntington Beach Burger Buns By Hand

 

Put the warm (not hot) water, sugar, and oil in a bowl.  Sprinkle with your yeast and let sit for a while. When the yeast has puffed then add your salt, cheese, and flour. When it gets to be too thick to work with a spoon pull your dough out on a lightly floured surface and knead the rest of the flour into your dough.  It should make a nice smooth dough. Pour some oil in the bowl and work it onto all sides of the bowl and then place the dough inside.

 

Roll the dough around in the oil to lightly cover all of the dough.  Get a piece of plastic wrap and cover or cover it with a flour sack towel or light apron.  Sit in a warm, draft-free spot and let rise until doubled in size. When it has doubled in size pull out your dough and back onto a lightly floured surface so the dough will not stick. 

 

Divide your dough into 5 or 6 equal portions and make individual rounds.  Lightly flatten (not too much now) the top of the round.  Using a paper towel lightly oil the cookie sheet with your favorite healthy oil. 

 

Place the dough rounds on the cookie sheet.  Make sure you leave room between them for rising.  You do not want them to all stick together when they are done. That would not be fun. You may need to use more than one baking sheet. That is fine. 

 

Put your flour sack towel or light apron over the top and sit in a warm draft-free spot until they again double in size. The amount of time will depend on the freshness of your yeast and the warmth of your kitchen.  

 

Preheat your oven to 350 F  (176.6 c.) 

 

Bake your hamburger buns for 20 min or until golden in color.  Take them off of your baking pan and onto a wire rack to cool. This keeps them from getting wet and steamy on the bottom.  When cool enough to handle you can cut them in half and serve. 

 

How To Make Strips With Cheese:

 

Take a few corn tortillas and slice them in strips about as wide as your forefinger.  

 

In a shallow dish heat your favorite oil.  Place a few strips at a time in the oil until they are to your liking as far as crispness.  Remove with a slotted spoon and onto a plate with a paper towel on it to capture oil. Sprinkle lightly with salt and cheese while they are hot.  

 

You can also make them in the oven.  Slice your tortillas into strips and using spray oil spray your baking sheet and lightly spray your tortillas.  Place in the oven on broil until they begin to crisp up to your liking.  Remove them from the oven and sprinkle them with your favorite cheese. 

 

To Assemble Your Huntington Beach Burger:

 

Make cheese strips.
 
Cook patty to the desired doneness, sprinkle with Mrs. Dash, salt, nutritional yeast.
 
Spread mayonnaise on the bun, and drizzle sauce over one side.
 
Top patty with lettuce and cheese strips. Serve immediately.
