The Best Meatloaf Recipe

Meatloaf is such a classic comfort food. It was one of Grandpa Cottage’s favorite meals and Grandma Cottage loved to make it for him because she loved to make him happy.  How do you make the perfect meatloaf? Well, she would work that ground beef add the perfect amount of spices to it, and bake it just right. Sometimes she would cook it with chopped potato pieces in the sauce and sometimes she would make these perfect mashed potatoes with a pat of butter and hot buttered peas.  Oh, this is just delicious!
People ask us what is the secret to a moist meatloaf. Well, the secret is the eggs.  Don’t skip them, they really make it wonderful.  Also don’t overwork the seasonings and eggs into the meat and don’t push and squish the meat when you are making it into a loaf.
The next thing that people ask is do you cook meatloaf covered or uncovered?  Covering the meatloaf keeps the moisture in and makes your meatloaf tender and keeps the sauce from cooking away.
