Ore-Ida Totchos

1 bag Ore-ida Tots
2 lbs Ground Beef (We used grass fed beef.)
2 Sweet Onions
2 Sweet Bell Peppers
1/2 Tablespoon Cumin
1 Tablespoon Chili Powder
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
Himalayan Pink Salt to taste
Pepper to taste
2 – 15.5 oz Cans Organic Black Beans
2 – 15.5 oz Cans of Kidney Beans
2 Pint Jars Of Green Salsa (We used home made.)

In a stock pan brown your beef. Season meat and add canned beans.
Chop your bell peppers and place in pan and saute’ in grass fed butter or coconut oil until sweet and tender. Add peppers to meat and bean mixture, reserving oil for onions. Chop onions and place in reserved oil. Cook until tender and translucent and the onions will be sweet.  I like to add salt and pepper to onions while they cook. When tender add them to beans, beef and peppers.  Stir well to combine.  To this we added 2 home canned jars of mild green salsa.  This we made over the summer with our green tomatoes.  You can use store bought jars or even maybe a green enchilada sauce.  Stir well to mix and then reduce heat and let simmer.  Spoon over tots and add cheese.
