The Best Ore-Ida Totchos

These are the best totchos out there we think.  Totchos are a great way to take a side dish and make it a main course meal. You can use your favorite brand of tater tots or make your own from scratch. This is a perfect dish to make when you are in a hurry and have places to go. These totchos can be made ahead and put together at the last minute and taken with you for an on-the-go meal.  If you don’t like beef you can use ground turkey, chicken, or even just use the seasoned beans and veggies. It can be topped with sour cream and guacamole or a dollop of your favorite ranch dressing.  We love to serve this with a delicious salad with our favorite vegetables in it. 
 
What if I don’t have organic ingredients and grass-fed butter?
You can just use what you have.
 
Are these totchos gluten-free?
Our ingredients do not include gluten but check your bag of tater tots to make sure there is nothing added to them that may have gluten in them.
 
Can I make this dairy-free?
Yes, you can omit the dairy or simply add a dairy-free cheese to it.
 
Can you make your own tater tots?
Yes, we have not tried it yet but we plan to soon.
 
Are totchos spicy? I don’t like spicy food.
They can be as mild or spicy as you want. You are in control.  You can use a mild salsa, medium, hot or even just use a tomato sauce in it.  If you replace the salsa you may want to add some additional spices to your meat and bean mixture to give it some extra flavor.  Taste often as you add the seasonings.
 
What if I don’t like beans?
Feel free to omit the beans if you don’t like them and just use the meat sauce.

2 lbs Ground Beef (We used grass-fed beef.)
2 Sweet Onions diced
2 Sweet Bell Peppers diced
1/2 Tablespoon Cumin powder
1 Tablespoon Chili Powder
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
Black Pepper to taste
2 – 15.5 oz Cans Organic Black Beans
2 – 15.5 oz Cans of Organic  Kidney Beans
2 Pint Jars Of Green Salsa (We used homemade.)
Cheese
 

Directions:

  • In a stock pan, brown your beef.
  • Season the ground meat and add your canned beans, stir well to incorporate.
  • Chop your bell peppers and place in pan and season with salt and pepper and saute’ them in grass-fed butter or coconut oil until sweet and tender.
  • Add the peppers to your meat and bean mixture, reserving the oil for onions. 
  • Dice all of the onions and place them in reserved oil. Cook until tender and translucent and the onions will be sweet.  I like to add salt and pepper to onions while they cook.
  • When tender add the onions to beans, beef, and peppers.  
  • Stir well to combine.  
  • To this, we added 2 home-canned jars of mild green salsa.  This we made over the summer with our green tomatoes.  You can use store-bought jars of salsa verde or even maybe a regular salsa you love.  
  • Stir this well to mix and then reduce heat and let simmer.  
  • Bake your tater tots until they are hot throughout and place them in a bowl or on a plate.
  • Spoon chili mix over tots and add cheese.

  • 1 bag Ore-Ida Tots

  • 2 Sweet Onions diced

  • 1/2 Tablespoon Cumin powder

  • Himalayan Pink Salt to taste
  • Black Pepper to taste
