Cream Of Mushroom Soup

This cream of mushroom soup is the most wonderful tasting soup, a true comfort food. We eat it just as is, use it in green bean casserole, pour this mushroom soup over chicken with mushroom gravy and the list goes on! The dish is great paired with a piece of hot crusty bread and sweet butter and a green salad. It brings back memories of my childhood and mom opening the can of Cream of Mushroom Soup for me for lunch. This is no longer an option because of my soy allergy. But, this is a super easy recipe and very quick to make so you can still whip this up for your family in no time. It is easy to customize by changing out the variety of mushrooms for a different taste. We use button mushrooms but you can use portabella or any of the other varieties you like.

How Do You Have A Soup Party?

Invite your friends over. You can have it potluck style and everyone brings a kind of soup or make several soups yourself that you make ahead of time. Have side dishes in bowls to add to the soups and have loaves of crusty bread available.  Set up the soups in the kitchen on a counter, island, or on a sideboard or table with a big stack of bowls, spoons, and napkins. Make sure you have enough bowls and spoons and if you decide on disposable that you have your trash handy and empty.
 

How Do You Serve Soup As A Main Course?


We would make a large pot of soup and serve it in a big soup tureen in the center of your table in place of a decorative centerpiece. For another look, you could make some of our boule bread rounds and hollow out the center, and serve your soup in a bread bowl. 

Cream Of Mushroom Soup Recipe

Ingredients:

1 sweet onion
2 Cups Milk
1 Cup Sliced Mushrooms
Celtic Sea Salt to taste
 

Directions:

  • Put your mushrooms in a colander and rinse them.  Set it on a plate to drip dry.
  • On a cutting board slice or dice, the washed and drained mushrooms. 
  • Saute’ the mushrooms in a pan with a little oil or butter.
  • Set mushrooms aside on a plate.
  • Dice up onions on the cutting board.
  • Place them in the saute’ pan with a little oil or butter and cook until the onions are translucent and tender. Salt and pepper them while you cook.
  • In a pot melt the butter and then stir in the flour until thick. This is the roux.
  • To the roux add your milk and broth and whisk well until well combined.
  • Season and cook on medium / low and stir constantly until the mixture is slightly thickened and bubbly.
  • Add to this your onions and mushrooms
  • Stir to combine.
  • Taste for flavor and seasonings and adjust them to your own tastes.
  • Serve hot.

  • 1 Cup Organic All-Purpose Flour
  • 2 Cups Milk
  • 6 Cups Organic Chicken Broth
  • 1 Cup Sliced Mushrooms
  • Celtic Sea Salt to taste
  • Organic Onion Powder to taste
  • Organic Garlic Powder to taste

Instructions

Put your mushrooms in a colander and rinse them.  Set it on a plate to drip dry.

Saute' the mushrooms in a pan with a little oil or butter.
