Cucumber Salsa

This cucumber salsa is such a good recipe. We love to garden at the cottage so in the summertime our kitchen is bursting with fresh fruits and vegetables.  We grow a lot of tomato varieties in our garden every year which gives us baskets and baskets of tomatoes and a whole lot of cucumbers. We love to make all kinds of fresh dishes like cucumber salads and green salads with cucumber. We can tons of tomatoes each year too.  We don’t like anything to go to waste at all but preserve what we are able to for winter but eating them fresh whenever we can.  Out of this, this salsa was born. This cucumber salsa is so easy to make and tastes delicious!  It is one of my favorite salsa recipes I have ever had.  It is such a fresh taste and would be good on so many things.  We like to use it on chips of course but also serve it over some delicious chicken breasts or on top of a tender fillet of fish. You could serve it on a snack cracker or even on a taco salad. We love it spooned on a hot baked potato or on a cold pasta salad.  Use your imagination but don’t miss this recipe.  This is so fresh, so delicious you must try it! You won’t believe how good this Salsa is!

Cucumber Salsa Recipe

Supplies:

  • Sharp knife
  • Cutting Board
  • Serving Bowl

Ingredients:

3 organic tomatoes
2 cloves of garlic
1 small organic sweet onion
1/2 organic cucumber
Himalayan or Celtic Sea Salt
fresh parsley or cilantro
2 tsp lemon juice
Garlic powder to taste

Directions:

Chop your tomatoes

Cube your cucumber.

In a food processor chop onion and garlic and add to the tomatoes.

Add lemon juice, salt, and parsley.

Serve with chips or over chicken breast, taco salad or anything else you can come up with.
