Peanut butter bonbons are a treat that really got me through my time in the service. These were part of the homemade candy that my mom filled in a shoebox and sent to me while I was off in Desert Shield and I can tell you that it meant so much to have a little bit of home and family across the seas. Many of my friends received nothing from home so they would gather around me and that tattered box, wrapped in brown paper and packing tape, the corners a little squished but there it was.

They barely took a breath as we gathered in the mess room around the table and I opened it and pulled back the tissue paper. There they were, peanut butter bonbons, along with Ritz Crackers with peanut butter dipped in chocolate, and peanut butter fudge.

Mom's Peanut Butter Bonbons Recipe

Rosevine Cottage Girls sketch with animals

Ingredients

  • 1 pound of powdered sugar (we use organic)
  • 12 ounces of organic peanut butter (or other nut butter)
  • 1/2 cup or 1 stick of melted butter (we use grass fed-butter)
  • 12 ounces of chocolate chips (We use a soy-free variety because of allergies)
  • Chopped Walnuts, peanuts or candy sprinkles (Optional)

Instructions

Mix & shape into small balls. Refrigerate for 30 minutes.

Chop walnuts, push a small piece into the center, then roll the dough through chopped nuts so that it is coated.

Melt chocolate on top of double boiler stirring constantly.

Dip balls into the chocolate mixture with a toothpick into making sure to get the chocolate on the peanut butter bonbon on every side.

Put the bonbon on a sheet of parchment paper to dry. You can add chocolate drizzles in dark or light chocolate, finely chopped walnuts, almonds, pecans, sprinkles, etc. (If you don’t want the nuts or sprinkles or chocolate drizzles you can skip that step and just dip the plain peanut butter balls into the chocolate.)

Let cool on the counter on parchment paper or put them on a baking sheet on the paper and slip them in the refrigerator for awhile until the chocolate firms up and makes a nice shell on the outside of the bonbon.
