Sweet Chili Sauce Meatballs in Pineapple Bowls

Today we bring you sweet chili sauce meatballs in pineapple sauce. Summer is upon us in all of its glory! Vacations, BBQ’s and lots of time in the sun mark the calendar, so we thought we would bring you a recipe full of tropical flavors this week. Sweet pineapple, tender meatballs, sweet and tangy chili sauce, and delicious saute rice. This recipe is easy and super tasty! Who’s ready to bring the tropics to your kitchen?

Ingredients:

1 pound Ground Beef
1 Teaspoon Chili Powder
1/2 tsp Himalayan Pink Salt
Mrs. Dash lemon pepper
1 Pastured Egg
1 Small Onion Diced
2 Cloves Garlic Minced
1 Tablespoons Organic Olive Oil
1 Teaspoon Nutritional Yeast
1 Teaspoon of Parsley
1 Teaspoon Coconut Aminos
1 Teaspoon Fish Sauce
Sweet Chili Sauce

Directions:

Chop onions and saute until tender in olive oil add minced garlic and cook until done.
Add this to your ground beef.  Add egg and spices and mix.  It will be really moist.  Put olive oil in your pan and heat.  We cooked on medium-low on our stove but they vary.  Don’t cook too high or fast so they don’t dry out. Make balls and place them in the pan with the warmed oil.  Let sit until they firm up and carefully roll. Pour sweet chili sauce over the top.

Ingredients:

Oil
1 Cup Rice
2 Cup Broth or Water

Directions:

Put oil in the bottom of a pan, brown rice in oil until golden add liquid and cook for 25 minutes.

Assembly:

Cut two pineapples in half and remove insides (now would be a good time to make a fruit salad!), spoon rice into the bottom of the bowl you just created. On top of this add meatballs, you can spoon some of the sauce over the top and top with chunks of pineapple.
