Hearty Breakfast Recipe

Ingredients:

6 Slices of Nitrate Free Bacon
4 Cups Yukon Gold Potatoes
4 Eggs
Salt & Pepper
Cheddar Cheese
1/4 Cup Broth
Salsa
Cilantro

Directions:

Fry the nitrate-free bacon in a cast iron pan until crisp, crumble, and set aside.
Spread potatoes evenly in pan with the bacon fat.
Sprinkle with salt and pepper.
Cover them with a lid and let it cook over medium heat for 10 minutes.
Add the broth and simmer until done and bacon and cheese.
In a cast-iron frying pan fry eggs, add to the top of the potatoes.
Spoon a bit of salsa in the middle, add cilantro.
Serves 4.
