Smoked roast beef on Texas Toast was a meal I had planned for the week when my stove blew up. I was cooking on the glass range top that day and what looked like fireworks went off under the glass with some pretty fearful popping. Therefore, this was cooked all outside on the grill and smoker with the exception of the bread that I cooked using our electric roasting pan and a canning jar of water inside to add moisture (don’t ask – ha ha).
The smoked roast beef on Texas toast was a huge hit. We ended up with unexpected company that night and it all came out so well. It was a meal that I could be proud of, no matter that my oven had exploded in the kitchen.
I love how the smoked beef came out, so tender and juicy and the Texas toast is crusty and soft in the middle.
