Spanish Rice

Some of our favorite food is Mexican food and a bowl of good Spanish rice is part of that love.  Mom, growing up in southern California brought those spicy flavors to her own kitchen and introduced them to us from the time we were knee-high to a grasshopper.

We want to share this wonderful dish with you friends so that you too can enjoy this simple dish without having to go to an expensive restaurant or buy a box. Get this fresh taste in your kitchen tonight!

 

Spanish Rice

Ingredients:

  • 2 cups uncooked jasmine rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp  of cumin
  • 1 tsp of chili powder
  • 1/2 tsp of dried oregano
  • 1 bay leaf
  • Himalayan Pink Salt
  • Pepper 
  • 4 cups of bone broth (see our recipe), chicken broth, or vegetable broth
  • 15.5 ounce can fire-roasted diced tomatoes, with juices
  • 3 Tbsp of butter
  • cilantro 

Directions:

Melt butter in your skillet and add your rice to the pan and saute for 3 minutes. Add your onions, and saute another 2-3 minutes stirring constantly.  Add your seasonings, garlic, salt, and pepper to taste, and stir in well. Pour in your broth and tomatoes and the liquid with it, and toss in a bay leaf. Bring your rice up to a boil then reduce heat and cover. 
Cook for 15 minutes or what your brand of rice calls for. Top with chopped cilantro.
