Some of our favorite food is Mexican food and a bowl of good Spanish rice is part of that love. Mom, growing up in southern California brought those spicy flavors to her own kitchen and introduced them to us from the time we were knee-high to a grasshopper.

Spanish Rice
Ingredients:
- 2 cups uncooked jasmine rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp of cumin
- 1 tsp of chili powder
- 1/2 tsp of dried oregano
- 1 bay leaf
- Himalayan Pink Salt
- Pepper
- 4 cups of bone broth (see our recipe), chicken broth, or vegetable broth
- 15.5 ounce can fire-roasted diced tomatoes, with juices
- 3 Tbsp of butter
