We’ve never been big zucchini fans- until now. A friend of ours was making stuffed zucchini and got Mrs. Cottage to try it with some of the zucchini from our garden. The rest is history! Stuffed zucchini is a family favorite now, and it’s so easy to make! This is perfect for those busy nights
Stuffed Zucchini Recipe
Supplies:
Ingredients:
1/2 LBS Ground Beef browned
1 Large Tomato chopped
1 Bell Pepper chopped
1/2 Small Onion chopped
4 zucchini 7″ each
8 Basil Leaves
Salt to taste
Pepper to taste
Olive Oil

Directions:
Preheat oven to 350F.
Cut the center out of the zucchini and chop what you remove.
Drizzle hollowed zucchini with oil and sprinkle with salt and pepper. Place zucchini in a casserole pan and bake for 25 minutes or until done.
Brown ground beef over medium heat and season to taste.
Saute tomato, pepper, onion, and chopped zucchini in a pan with olive oil over medium heat. Season to taste and cook until veggies are almost done but still firm.
Remove the zucchini from the oven and fill with sauteed veggies, top with cheese. Return to the oven and allow the cheese to melt. Serve hot.
