Summer Chicken Salad

1 Head of Romaine Lettuce

1 Head of Green Leaf Lettuce
4 Boiled Eggs Cut Into Quarters
Can of Mandarin Oranges In Juice – Drained
A Few Sliced Fresh Strawberries
Orange Sweet Peppers Sliced
Chicken Salad
Apple Cut In Chunks
Carrot Sliced thin with a vegetable peeler
Kosher Dill Pickles

This is a great summer salad.  It is all cool and fresh for those hot days when you don’t want to heat your house up cooking.

In a pan boil eggs in water for 10 min for a hard boiled egg.  When done remove from heat, pour off water and cover with cold water. Do this a couple of times or place in refrigerator to cool well.

Wash your lettuce well and dry excess water with a paper towel.  Rough chop them and combine depending on how much you need for your family.

Wash and slice your strawberries and add them to the salad with your sliced peppers and chunks of apples.  Chop up your pepper and add those as well.  Take your carrot and peel them through all the way by slicing up and down up and down until they are too thin to slice. Do this to you feel you have enough for your salad.  Add to the bowl your orange slices.  Toss and plate your salad and add the chicken salad, eggs, and your favorite salad dressing.  Place your favorite pickle on the side of your plate to enjoy!
