Summer Chicken Salad

This delicious summer chicken salad is so tasty.  It is packed full of protein and delicious fruits that it is a great meal for busy summer evenings when you just want something quick and cool.
This would be delicious with:
 
  • A flakey croissant
  • A crunchy baguette
  • A hot steamy bowl of soup

The best bet when this is done in the hottest part of summer is to make the eggs and the chicken salad before the day gets too hot and keep them in the refrigerator so that this will be a truly no cooking meal.  We like to make them ahead anyway to keep the boiled eggs in the fridge for a quick grab and go breakfast or a snack for a hike and the chicken salad to keep on hand for a sandwich, a snack with fresh fruit or on top of crackers and of course for a salad.

What you will need for the chicken salad 

  • Sharp Knife
  • Cutting Board
  • Large Salad Bowl
  • Pan for cooking eggs
  • Vegetable Peeler
  • Colander
  • Apron

Summer Chicken Salad Recipe

 
1 Head of Romaine Lettuce

1 Head of Green Leaf Lettuce
4 Boiled Eggs Cut Into Quarters – can be made ahead and kept in the refrigerator
Can of Mandarin Oranges In Juice – Drained
A Few Sliced Fresh Strawberries
Orange Sweet Snack Peppers Sliced
Chicken Salad (chicken, mayonnaise, salt, pepper) make ahead and keep in the refrigerator
Apple Cut In Chunks
Carrot grated
Kosher Dill Pickles if desired to garnish

This is a great summer salad.  It is all cool and fresh for those hot days when you don’t want to heat your house up cooking.

  • In a pan boil eggs in water for 10 min for a hard boiled egg.  When done remove from heat, pour off water and cover with cold water. Do this a couple of times or place in refrigerator to cool well.
  • Add chicken pieces to a pan and cover with water. Salt and pepper the water and let simmer until done. When done remove the chicken onto a cutting board to cool.  Using two forks shred the chicken and add to a bowl.  Add a dollop of mayonnaise, some salt and pepper to taste.  Other seasonings can be added as desired. Put in refrigerator to cool completely.
  • Wash your lettuce and drain in a colander.  You can dry excess water with a paper towel.  Using a sharp knife rough chop the lettuce and combine depending on how much you need for your family.
  • Wash and slice your strawberries and add them to the salad
  • Slice peppers to your desired size and add to the bowl.
  • Wash and slice chunks of apples and add them to your salad. 
  • Wash your carrot and peel them. Using a grater grate the carrot and add them to your salad
  • Using a can opener, open the can of Mandarin oranges.   Add to the bowl your orange slices.  
  • Take your cooled eggs and peel them carefully.  Slice or dice the eggs which ever you prefer.
  • Toss the salad making sure to combine all of your ingredients
  • Place the salad in a plate or bowl.
  • To the top of the salad add the chicken salad, eggs, and your favorite salad dressing.  Place your favorite pickle on the side of your plate to enjoy!
