Sunflower Java Chocolate Cupcakes

We stumbled on these adorable sunflower baking cups at Walmart the other day and just HAD to get them! Aren’t they cute? And of course, the perfect thing to go in them was our favorite chocolate cupcakes! This recipe is super easy and SOOOOOO amazing tasting. Even people who aren’t a fan of chocolate or coffee love these. They are super moist and not too sweet. The icing- oh the icing! I could seriously eat this stuff with a spoon. It is the most amazing stuff you have ever tasted! Not sickeningly sweet but oh so good!

How Long Have Cupcakes Been Around?

The cake has been around since ancient Egypt 2000 years ago. The first use of the English word cake began in the 13th century. Cupcakes have been around for a long time. The first cookbook that mentions them is the American Cookery by Amelia Simms Back in 1796. She writes of cakes to be baked in small cups.

Java Chocolate Cupcakes

Ingredients:
2 1/2 Cups Organic All-Purpose Flour
1 1/2 Cups Organic Raw Sugar
1/2 Cup Cocoa Powder
2 Teaspoons Baking Soda
1/2 Teaspoon Sea Salt
2/3 Cup Olive Oil
2 Tablespoons Bragg Raw Apple Cider Vinegar
1 Tablespoon Vanilla
2 Cups Cold Coffee
1/2 Teaspoon Cinnamon

Directions: 

Stir together flour, sugar, cocoa, soda, and salt in a bowl. Make 3 wells in the mixture; pour oil in one vinegar in one and vanilla in another. Pour in coffee and gently stir. Scoop into baking cups. Bake at 350, for 18 minutes or until done. Allow to completely cool and then ice.

1/2 cup Whipping Cream
3 Tablespoons Cocoa Powder
