The Best Zucchini Egg Bake

 

We really love this Zucchini egg bake casserole. It is basically a casserole frittata and is absolutely wonderful! This time of year the garden is producing a ton of fresh vegetables and we are bringing them in by the basketful each evening here at the cottage.  Zucchini, tomatoes, peppers, and eggs from the henhouse are all part of the bounty.

This recipe was made just for this time of year.  If you don’t have a garden, don’t worry, all of these items can be purchased at the local grocery store.

Why Is Zucchini Not Good For You?

Actually, zucchini is quite good for you but it is how you prepare it that makes all of the difference. Deep frying food is not a healthy choice but there are tons of recipes that you can try that do not fry the zucchini and make it a healthy choice for you and your family.

Is Zucchini Same As A Cucumber?

Zucchini and cucumbers do look much alike in their size and shape and even inside with the center row of seeds, Zucchini and cucumbers are not the same.  A cucumber has a thicker skin.  The zucchini has a thicker and more woody stem than the cucumber which is on a thin vine. Cucumbers are a pale green and zucchini have a creamy color inside. When you bite into a cucumber they tend to be crisp where zucchini is softer.  Cucumbers have a way higher water content than zucchini does as well.

They have manganese, vitamin C, vitamin A, leutine, beta carotene, zeaxanthin, and dehydroascorbic acid.  They are a good source of antioxidants and have anti-inflammatory properties. What Is The Healthiest Way To Eat Zucchini?

Probably the most healthy way is to eat it raw but you can steam it, bake it, stirfry it in healthy oils.

What Goes With A Fritata For Breakfast?

We like to serve them with some fresh fruit but you can serve it with a piece of bacon or sausage, a slice of toast, with hot tea or coffee.

What Does A Frittata Taste Like?

A good frittata will have a light and fluffy consistency. It will be creamy and delicious.

How Do You Know When An Egg Casserole Is Done?

The best way to know if an egg casserole is done baking is to insert a clean toothpick into the center of the zucchini egg bake and when you draw the toothpick back out it should be clean.

What Is The Difference Between A Breakfast Casserole And A Quiche?

The main difference between the zucchini egg bake (breakfast casserole) and a quiche is that there is not a crust on the bottom of the zucchini egg bake and there is on a quiche.  A quiche is also usually much more fluffy and has a higher rise when baking than you will with this casserole dish.  They are both delicious though!

 

What You Need For The Zucchini Egg Bake Recipe

  • Casserole Pan
  • Sharp Knife
  • Measuring Spoons
  • Measuring Cups
  • Hot Pan Holders
  • A Spatula For Serving
  • Trivet
  • Pan to saute vegetables

 

Zucchini Egg Bake Recipe

Ingredients:

  • 3 to 5 whole zucchini 
  • 1 onion diced
  • 1 sweet bell pepper (optional)
  • 4 eggs (we used pasture-raised eggs from our girls)
  • 1 cup of flour
  • 1 Tablespoon of dry yeast
  • 1/2 cup of parmesan cheese
  • 1/4 cup of oil
  • Shredded cheese of your choice
  • Salt & Pepper
  • Fresh Basil or Cilantro (if desired)
  • Fresh Tomato (sliced thin and salted and peppered)

Directions:

  • Using a sharp knife chop up your zucchini removing the stem end.
  • Slice off the root end of your onion, peel it and then dice up the onion in small squares
  • Wash your sweet bell pepper and core it.  Cut it into thin vertical slices then slice them again in dices. 
  • Wash a fresh tomato and slice it thinly.  Put it on a plate and salt and pepper it and set aside.
  • Saute the onion and pepper in oil until tender.
  • Put the zucchini, onion, and your sweet bell pepper in a bowl.
  • In another small bowl crack 4 clean eggs.  With a fork or whisk beat your eggs well. Season them with salt and pepper.
  • Add oil, parmesan cheese, yeast, flour, salt, and pepper whisk.  
  • Add to your vegetables and mix well. 
  • Pour into an oiled casserole dish
  • Top with your choice of shredded cheese 
  • Top with thinly sliced seasoned tomatoes
  • place basil leaves or cilantro leaves on top (if desired)
  • Place in oven preheated to 350 F.  176 C. for one hour
  • Remove from the oven to a trivet and cut into squares using a knife.  Serve hot.
