The Most Delicious Oatmeal Coconut Cookies

These are Grandma Cottage’s Most Delicious Oatmeal Coconut Cookies. She got the recipe from Mrs. Cottage’s dear 4th-grade teacher in Louisana. She had given a gift to the teacher and she made a gift of Oatmeal Coconut Cookies and Chocolate Chip Cookies. This is one of those recipes.  Grandma sometimes added a handful of raisins and sometimes 1/2 cup of chocolate chips. This is a recipe that even someone that does not like coconut (ahem Mr. Cottage) loves.

The Most Delicious Oatmeal Coconut Cookies

These oatmeal coconut cookies are pretty easy to make and absolutely delicious! 

What You’ll Need To Make Oatmeal Coconut Cookies:

Oatmeal Coconut Cookies

Ingredients:

1 1/2 cups sifted unbleached flour 

1 teaspoon baking Soda

1 teaspoon salt ( We use Himalayan Pink Salt)

1 cup sugar

1/4 cup brown sugar

1 1/4 cup uncooked rolled oats (not quick oats)

3/4 cup flaked coconut

1 cup shortening (we use organic palm shortening or coconut oil)

1 egg (well beaten)

1 teaspoon Vanilla

Can also add raisins, chocolate chips, or MnM’s

Directions:

Sift together flour, baking soda,  and salt.

In another bowl mix sugar, brown sugar, vanilla, oats, coconut, and eggs.

Melt shortening, coconut oil, or butter in a small pan. 

Add it to your sugar mix. 

Mix in your flour mixture

Shape into balls and press down with a fork

Bake at 350 degrees F.  for 10 – 15 minutes

We bake at about 12 but it will depend on your oven. 

Makes about 2 dozen.
