Sweet “Sending You Love” Valentine’s Cookie Recipe

You need to try this Valentine’s Cookie Recipe this year. Valentine’s Day is right around the corner! This is one of my favorite Valentine’s treats, super easy to make and so tasty. Sweet filling covered with a delicious and flaky crust. I think they are so pretty and make quite a statement. This is a version of Kolaczki. which is a traditional Polish envelope cookie. We made this little Valentine’s spin on the Kolaczki for Mr. Cottage to show him just how much we love him. This recipe is great for kids, we took some to our little cousins and they loved them!  It’s perfect for get-togethers, work, neighbors or with your cup of coffee or tea.

This recipe is super simple to make. The most difficult part is cutting in the butter to your flour and that is not hard at all. The cutting in of the butter makes the dough very flakey and delicious.
The sprinkles on top of these Valentine’s cookies are just an extra touch.  If you don’t have them or can’t find them you can make them with a bit of dough, a bit of icing or just omit it.

“Sending You Love” Valentine’s Cookie Recipe

 

Ingredients:

1 1/4 Cups Organic Flour
1/2 Teaspoon Salt
1/3 Cups Organic Butter
3-4 Tablespoons Cold Water
Favorite filling or preserves
Heart sprinkles

Directions 

 
  • In a medium-sized, bowl place your flour and salt. 
  • Stir together until well combined
  • Add half of your butter to this salt and flour and using a pastry knife or a fork cut in the butter to the flour. This is the process of mixing the butter into the flour for a flaky crust.
  • Measure out the water and add to your flour and butter mixture. Stir the water in well.
  • Slice the other half of the butter into thin slices
  • Put this butter into the bowl with the other ingredients and begin to knead it into the dough.
  • Cover your dough with plastic wrap and then place it in the refridgerator so the butter can harden.
  • Lightly dust the counter with flour 
  • Take the dough out of the refrigerator and turn it out onto the floured counter.
  • Roll out and cut 5 rectangles nice and thin.
  • Open your favorite jam or jelly and get a small tea spoon.
  • Spoon your favorite jelly or preserves into the middle, don’t overfill or it will all spill out
  • Fold up the edges to make an envelope.
  • Press a heart sprinkle into the dough.
  • Brush with egg whites.

Bake the cookies for 10 minutes or until golden at 350 F
