Vegetable Pasta Sauce Dish

This delicious summer vegetable pasta sauce dish is so easy to make and absolutely amazing. It truly is one of my favorite pasta recipes! Savory with a touch of spice, this vegetable sauce pasta is filled with fresh tomatoes, peppers, and garlic, with slices of fresh avocado and freshly grated cheese.

Supplies:

Large Pot
Sauce Pan
Spoon
Knife
Measuring Cups
Grater
Serving Bowl
Strainer

 

 Vegetable Pasta Sauce

Ingredients:

1 Tomato
4-5 Sweet Peppers
4 Garlic Cloves
1/2 Teaspoon Red Pepper Flakes
2 Tablespoons Olive Oil
4 Tablespoons Parmesan Cheese (plus extra for the top)
Avocado
Salt to taste

Directions:

Cook pasta to directions on the package. While that is cooking, smash, peel and chop garlic cloves. Place oil in a pan, and add garlic. Sautee garlic until golden, while that is cooking dice sweet peppers, and chop tomato. When garlic is golden add peppers and pepper flakes. Sautee until peppers are tender, salt to taste, and add tomato. When tomatoes are almost finished cooking add cheese. Turn heat to low and allow to simmer until pasta is finished cooking. Strain pasta, pour the sauce over the top and gently toss. Add slices of avocado to the top and grate cheese over the pasta. Serve hot.

Summer Vegetable Pasta Dish

Ingredients:

  • 1 Tomato
  • 4-5 Sweet Peppers

  • 1/2 Teaspoon Red Pepper Flakes

  • Farfalline Pasta (or your favorite type)

Directions:

  1. Boil water in a large stockpot. Cook pasta according to packaging. While that is cooking, smash, peel and chop garlic cloves. Place oil in a pan, and add garlic. Sautee garlic until golden, while that is cooking dice sweet peppers, and chop tomato. When garlic is golden add peppers and pepper flakes. Sautee until peppers are tender, salt to taste, and add tomato. When tomatoes are almost finished cooking add cheese. Turn heat to low and allow to simmer until pasta is finished cooking. Strain pasta and place in a serving bowl, pour the sauce over the pasta and toss. Slice avocado and pace in the center of the pasta in a circle. Sprinkle cheese over the top and serve.
