White bean chicken chili is so delicious and easy to make.  It is cozy on a cold fall or winter evening but still good enough to make on a summer day.  Serve this with a plate of cornbread, some biscuits, and butter or nachos.

White Bean Chicken Chili Recipe

Ingredients

  • 1 Tbsp of extra virgin olive oil
  • 1 small onion – diced
  • 1 jalapeno
  • 2 cloves of garlic
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of cumin
  • 9 ounces of Ortega green chilies 
  • 3 cups chicken breasts – diced
  • 5 cups of chicken broth or bone broth
  • Himalayan pink salt
  • Pepper
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of coriander
  • 1 tablespoon of lime juice
  • 1/2  teaspoon of  oregano
  • 30 ounces of white beans cannellini or great northern beans
  • 1/2 cup of sour cream or cream cheese
  • 1 Cup of milk
  • 1/4 cup of jack cheese (or your favorite cheese) shredded (plus a little extra for topping the bowl)
  • Tortilla chips
  • Fresh cilantro (optional)

 

The trick for a thick white bean chicken chili

If you find it is not thick enough for you add a cup of milk and 2-3 heaping tablespoons of cornstarch or flour to make a roux.  In a big mug or small bowl put your milk, add flour and whisk until combined, and put in the soup at the end to thicken.  Pour in and stir constantly until thickened. 

 

Directions For White Bean Chicken Chili

In a pot saute’ the diced onion pieces until they are tender. 

Throw in the garlic and saute’ until just done. They will start to turn golden and get very fragrant. 

Pour in the chicken or bone broth, green chilis and jalapeno peppers, and all of the seasonings except for the cilantro.

Put your diced chicken in the pot and stir.  

Reserve 1 cup of beans and some liquid from the beans and blend or put in the food processor to blend it down.

Put the beans blended beans and the whole beans into the pot of chili.  Stir well.

When the chicken and all of the other ingredients are done, add the sour cream, cheese, and lime juice

 

If that is still not thick enough make a roux. 

In a large mug or soup bowl and put in your flour or cornstarch.  Add part of the cold milk and whisk.  A add a bit more until all of the milk is in there and there are no lumps in it.  While whisking your chili constantly, pour the roux into the chili and keep stirring until it is thickened to your liking. Taste the chili for seasoning and add as needed.

Ladle out the chili into bowls. Top with crushed corn chips, cheese, and cilantro

To make homemade tortilla chips

You will need 

  • oil
  • corn tortillas
  • slotted spatula or slotted spoon
  • tongs
  • plate
  • paper towels
  • salt if desired

Directions for tortillas:

  • Take several corn tortillas and cut them into triangles or rectangles or whatever shape you desire.
  • Pour oil into a shallow pan and heat up.
  • Test to see if the oil is hot enough by dropping one of your pieces of tortilla into the oil and if it starts bubbling and popping around it is ready.
  • Put a few tortilla pieces into the oil and turn a couple of times. You will see it start to be golden around the edges. When it gets to your level of crispiness, remove the chips with a set of tongs of a slotted spoon or spatula. 
  • Place them on a plate with a napkin or paper towel to drain.  
  • Place them on top of your chili
  • Make extra and top while hot with cheese to make nachos.
  • Enjoy!

You can also top this with diced avocado, salsa, Tobasco and so much more.

Put into bowls and top with chips, sour cream, and cilantro. You can also add avocado dices, salsa, tobacco sauce. Anything you desire!
